Pan Baked Brinjal - Cellu

Ingredients:
1 big brinjal (sliced rounded)
1 large tomato (sliced rounded)
1 large onion (sliced rounded)
3 eggs
1 tbsp pepper powder or chilli flakes
½ tbsp herbs of your choice
½ cup mozzarella cheese
1-2 tbsp olive oil or cooking oil
salt to taste

Steps:

  1.  Soak brinjal slices in salt water, rinse and let dry.
  2. Heat oil in a pan big enough to hold all the slices of brinjal at one go.
  3. Arrange sliced brinjal in a layer and let it begin to fry on low fire for 2 minutes.
  4. Flip the side before it completely fries, and now layer with sliced onions. 
  5. Next layer with tomato slices.  
  6. Sprinkle salt, pepper powder or chilli flakes and herbs and some oil. 
  7. Cook it covered on low fire for about 3-4 minutes. 
  8. In a bowl beat eggs with a pinch of salt, and add this evenly on top of the cooking dish.
  9. Cook for a minute and then add a layer of mozzarella cheese.
  10. Cover, and continue cooking on low fire until cheese melts.
  11. ENJOY!
Notes:
  • Some spinach and a spoonful of finely chopped garlic may be added just before adding the egg mixture.
  • With preparation time less than 10 minutes, this dish can be a quick fix meal on a lazy day!
