Egg Curry - Karen Pereira

Ingredients
6 eggs
2 potatoes (cubes)
1 onion (sliced)
1 green onion/spring onion 
1/4" ginger (finely chopped)

To grind:
5-10 green chillies (adjust to your spice level)
2 kashmiri chillies
1 tsp jeera/cumin seeds
1/2 tsp turmeric powder
4-6 tbsp coconut milk powder

Steps:
  1. Hard boil the eggs, create slits on the side and set aside. 

  2. Grind the masala to a fine paste. 
  3. In a vessel, heat ghee. 
  4. Add the onion, green onion, ginger and  the ground masala and bring to a boil with 1 cup water. 
  5. Add the boiled eggs and potatoes to the curry. Bring the curry to a boil and continue cooking till potatoes are cooked.
  6. ENJOY!
Notes:
  • If the curry is too spicy, add more coconut milk powder and 1-2tsp vinegar and bring to a boil.
