Brinjal Patiala - Karen Pereira

Ingredients:
2 big brinjals 
3 onions (sliced)
3 tomatoes (chopped)
1" ginger (juliennes)
4 green chilis (slit)
1/2 tsp turmeric
1 tsp red chili powder
1 tsp sugar
1 tsp fenugreek seeds/methi
2 tsp aniseeds/saunf
10-15 cashew nuts
1 tsp garam masala
a little lime juice
coriander leaves (garnish)
salt

Steps:
  1. Wash, dry, cut the brinjals into cubes, deep fry and keep aside.

  2. In a vessel, heat oil.
  3. Add fenugreek seeds, aniseed and onions and fry.
  4. Add green chilis, tomatoes, ginger and cashew nuts. Fry till tomatoes are cooked.
  5. Add sugar, salt, lime juice, chili powder, garam masala and turmeric. Fry for a while then add fried brinjals and mix well.
  6. Garnish with coriander leaves.
  7. ENJOY!
