Ingredients:
750 gms shrimp
3 thai red chillies
1 large onion (cut in cubes and separated)
1 large capsicum (cut in cubes)
15-20 cashew nuts
5 garlic cloves (minced)
1 inch ginger (finely sliced)
1 tbsp oyster sauce
3 tbsp soy sauce
1 tsp chili flakes
1 tbsp pepper
1 tsp sugar
2 tsp chili garlic sauce
1 tbsp Sriracha sauce
2 tbsp chili vinegar - adjust to taste
1 tsp corn starch
spring onions (garnish)
Steps:
- Marinate prawns with salt and pepper.
- In a wok, heat oil.
- Add minced garlic, chilis and cashew nuts. Fry till the garlic turns brown.
- Add ginger, onion petals and capsicum. Saute till onions cook slightly.
- Add salt, pepper, Sriracha sauce and chili garlic sauce. Saute for a minute.
- Add prawns and let it cook through.
- Add sugar, chilli flakes, chili vinegar and soy sauce. Mix well.
- Make a corn starch slurry and add to thicken the gravy to your desired consistency.
- Garnish with spring onions.
