Ingredients:
To pressure cook:
1 kg mutton (curry cut)
1 tbsp oil
2 large onions (roughly chopped)
2 large tomatoes (roughly chopped)
1 tsp garam masala powder
2 tsp salt
1 tbsp vinegar or lemon juice
For the masala:
1 tbsp coconut oil
1 small onion (finely chopped)
1 sprig curry leaves
2 tbsp coriander seeds
1 tbsp saunf/fennel seeds
8 green chillis
6 almonds
6 cashews
6 sprigs mint leaves
1 bunch coriander leaves (set some aside for garnish)
1" ginger
6 cloves garlic
1/2 tsp turmeric powder
Steps:
- In a pressure cooker, add mutton, oil, onion, tomato, salt and garam masala. Add water and mix well. Pressure cook till the meat is almost cooked, 5-8 whistles.
- Meanwhile, prepare the masala. Heat 1 tsp oil in a pan. Add curry leaves, onions, and saute till it slightly changes in color.
- Then add ginger, garlic, green chilli, almonds, cashew nuts and saute for 3-4 minutes.
- Add turmeric, saunf, mint leaves, and coriander leaves. Mix well. Let this cool down and then grind till a smooth paste.
- Add the ground masala to the cooked mutton. Switch on the flame. Let it boil for 5 minutes.
- Add water, and adjust the consistency as preferred.
- Squeeze lemon juice/vinegar, chopped coriander leaves. Switch off the flame.
