Recipe by Joshua Lasrado
Ingredients:
1 large onion (sliced)
3 round red chillies
2 green chillies
4 cloves garlic
1 tsp whole cumin seeds
1 tsp mustard seeds
Handful of curry leaves
2 cups yogurt/laban
1 tsp garam masala powder
1 tsp turmeric powder
1 tsp Kashmiri chilli powder
1/2 tsp red chilli powder
1 tsp salt
Steps:
- Whisk yogurt or laban in a bowl till its smooth and set aside.
- In a vessel, heat ghee.
- Add onions, and saute for 2 minutes.
- Add garlic, red chilli, green chilli and saute lightly.
- Then add whole cumin, mustard seeds, curry leaves and garlic cloves.
- Add salt, turmeric powder, red chili powder, Kashmiri chili powder, and garam masala powder. Mix together and fry well. Add a few drops of water to avoid burning the spices.
- Turn down the heat, add half cup water and stir in the yogurt. Mix well with the masala till well combined.
- Add water according to desired consistency and stir occasionally till it thickens.
