Easy Fried Brinjal Snack - Cellu

Ingredients:
1 big brinjal/ eggplant (sliced round)
1 tomato (sliced round)
1 capsicum or 2 green chillis  (chopped)
10 tbsp mozarella cheese 
olive oil

For the paste:
1 tsp ginger garlic paste
1 tsp curry powder or chaat masala powder
1/4 tsp turmeric powder
1 tbsp lemon juice or vinegar
salt to taste

Steps:

  1. In a bowl, mix together ginger garlic paste, curry powder or chat masala powder, turmeric, lemon juice or vinegar and salt.
  2. Apply the paste on the brinjal slices.

  3. In a pan, heat olive oil.
  4. Add the brinjal slices and fry well on both sides, flipping it after 2-3 minutes.
  5. Add a slice of tomato on top of the fried brinjal, followed by capsicum or green chillies. Cook covered for 3-4 minutes on slow fire.
  6. Sprinkle shredded mozzarella cheese and cook covered till the cheese melts. 
  7. Serve hot with a garnish of coriander leaves.
