Mutton / Goat Rezala (no grinding) - Victor

Ingredients:
2 kg goat meat/mutton
1 cup greek yogurt
2 tsp salt
2 cups sliced onions
2 tbsp ginger paste 
2 tsp garlic paste
4 bay leaves
2 cinnamon sticks
6 green cardamom 
10 pepper corns 
1 cup oil
2 tsp cumin powder
2 tsp coriander powder 
2 tsp chili powder 
2" ginger (chopped)

To garnish:
1 tsp sugar 
1 tbsp lemon juice
2 tbsp rose water
2-3 green chilies *Optional 

Steps:
  1. Marinate meat with salt and yogurt for 2 hours.
  2. Mix ginger paste, garlic paste, coriander powder, cumin powder and chili powder with 1 cup water. Set aside. 
  3. Heat oil. Add bay leaves, cinnamon, cardamom and pepper corns.
  4. Add sliced onions and fry till brown.
  5. Add the spice mix and  continue cooking til the oil separates. 
  6. Add the marinated meat. Slow cook for 2 hours. 
  7. Add sugar, green chili, lemon juice and rose water.
  8. Cook on low heat for 20 minutes.
