Karahi Kheema - Jean

Ingredients:
1/2 kg mutton/beef mince
1 large onion (chopped)
3 large tomatoes (chopped small)
1" ginger (chopped)
5 cloves garlic (chopped)
1 tsp kashmiri chili powder
2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp cumin powder
1/4 cup yogurt (whisked) *optional
2 tbsp ghee
1/2 cup water
salt
green chillies (optional)

To garnish:
2 tbsp coriander leaves
1/2" ginger (julienne)
1 tsp garam masala powder

Steps:
  1. In a wok, heat ghee. 
  2. Add the onions, garlic and ginger and saute till brown.
  3. Add the minced meat and brown for 5 minutes.
  4. Add the spices, mix well. 
  5. Add 1/2 cup hot water. Bring to a boil, then for 25 minutes till the water is almost evaporated. Keep mixing in between.
  6. Add in the tomatoes, continue to cook for about 10 minutes on medium heat until the water begins to dry out and the oil starts to separate.
  7. Finally, turn down the flame and add the whisked yogurt and simmer uncovered for 5-10 minutes depending on your desired consistency. Turn off the heat.
  8. Garnish with ginger and chopped coriander leaves.
