Malabar Mutton Curry - Karen Pereira

Ingredients:
500 grams mutton (cut and cleaned)
2 big onions
2 tomatoes (sliced)
2 potatoes (peel and cut in quarters)
4 green chilies (sliced)

 2 tbsp coriander powder
1/2 tsp turmeric powder
1 tsp chilli powder

handful coriander leaves (chopped)
1/4 tsp garam masala powder
salt to taste

To grind:
1" ginger
8-10 cloves garlic 
1 star anise

Steps:
  1. Grind the ginger, garlic and aniseed to a fine paste. Add a little water if required. Keep aside. 

  2. In a vessel, heat oil.
  3. Add cloves, cinnamon, onions, green chillies and curry leaves. Fry till onions turn translucent.
  4. Add ground paste of ginger, garlic and aniseed. Fry till you get an aroma.
  5. Add coriander powder, turmeric powder and chilli powder. Fry well for about 5 minutes.
  6. Add mutton, fry till the meat changes colour. Reduce heat and cook on low for 5 minutes.
  7. Add 2 cups water, potatoes and tomatoes and cook till the gravy thickens amd the meat is soft.
  8. Sprinkle 1/4 tsp garam masala powder and garnish with coriander leaves.
